Lavender Fine Population High Altitude(Lavandula angustifoilia) Provence, France Organic

Yesterday we received a lovely consignment of organic high altitude from Provence, France. A population lavender is distilled from the lavender plants which display different shades of purple and white flowers collected from wild growing plants, then propogated and grown organically. The words "true" or "fine" are generally applied to the population lavender.

Prior to the modern lavender industry where lavender, lavindin and its cultivars are grown in various localities and elevations, the main harvest of lavender took place almost exclusively in the mountains of Provence where the hardy wild growing "population" lavender had established itself naturally. But as lavender grew in popularity both for perfumery and medicinal uses, a whole industry evolved whereby lavender and lavindin could be produced with higher yields and plants which could be grown in a more uniform way thus making mechanical harvest possible(whereas in earlier times all population lavender was harvested by hand) The mechanical harvest of lavender and lavindin along with the development of cultivars which were suited to be grown in more "farmable" locations resulted in lower costs for producing lavender and lavindin oils with the result that the high altititude fine population lavender of the mountains became a scarcer item of commerce(as it was much expensive to produce as it had to be harvested by hand and the yields were lower than selected cultivars)

In recent years there has been a revival in the high altitude population lavender though as the oil distilled in higher altitudes from plants which have a more extensive range of olfactory charactertics produces a unique oil with a more complex bouquet. Due to the kindness of my colleague Antoine Rignault of Union Nature Phyto Aroma in Canada I was able to procure 25 kilos of this years harvest of fine population lavender. Antoine travels extensively and has established a good relationship with one of the finest distillers of the mountain regions of Provence. All the oil which he offers is distilled from plants growing at 4000 feet and above.

The organic high altitude Lavender from Provence, France is a colorless liquid displaying a fresh, warm , sweet, green, herbaceous-resinous , delicate floral bouquet with a soft balsamic-woody undertone of good tenacity. It is not as sweet as some lavender oils but its charm lies in its warm, herbaceous/resinous complexity which seems to capture the essence of the mountains of Provence.
